Job Description
The ECU Dietitian combines expertise in food, nutrition, and the culinary arts. They plan and implement nutritional programs to assist in the promotion of health and wellness within the campus community, including: Providing nutrition information for on-campus dining locations, counseling individuals, providing nutrition-related services to individuals and groups, and developing handouts and other materials to support nutritional programming.
Job Responsibilities
- Provides ANSI-accredited allergy trainings for hourly associates at Welcome Back meetings, during school breaks, and as needed
- Maintains records for food allergy trainings (managers and hourly associates)
- Assesses product substitutions to ensure accuracy of menu transparency
- Performs monthly audits to ensure proper food handling as it relates to allergies and cross contact, collaborates with the team to ensure proper corrective actions
- Performs frequent audits to ensure compliance with National Menu Labeling laws
- Identifies and maintains menu signage in residential dining facilities
- Edits, maintains, and distributes the ECU Allergen Guide
- Works with the university's culinary team to ensure student's dietary needs are being accommodated and arranges for specially prepared meals, purchase of prepackaged foods, or sourcing special requests when the daily menu offerings do not meet their needs
- Provides individual tours to students and parents to familiarize them with our dining locations and to identify options related to their specific condition
- Provides outreach programs and interventions on campus
- Coordinates with relevant parties, including but not limited to; food service operations, culinary team, and marketing team to procure food samplings, swag, and graphics, and tracking engagement
- Offers nutrition-based information with a health focus to professional and/or consumer audiences
- Participates in social media campaigns, creating content for and publishes weekly Smart Start Sunday posts on Instagram
- As needed, develops story ideas and content for nutrition-based food articles for various publications
